 A hua diao (flower-carved) wine aged for three years. Brewed from the waters of Lake Jian, glutinous rice, and wheat koji; characterized by a dry, crisp profile and a mellow, rounded mouthfeel.

 
 □Gu Yue Long Shan 8-Year — Glass 800 yen / Bottle 4,800 yen
 Traditionally aged in earthenware urns. Renowned as a masterpiece of 8-year Shaoxing wine, blended with over 60% of the original 8-year vintage for a robust flavor and a richly fragrant bouquet.
 

 □Nu Er Hong 7-Year — Glass 1,000 yen / Bottle 4,900 yen
 Distinguished by a mellow, lactic character with a long, lingering finish. Subtle apricot-like fruit notes meet a gentle sweetness backed by ample acidity.


 □Jian Hu Jiu Fang 10-Year — Glass 1,200 yen / Bottle 7,500 yen
 A pleasing spread of mineral character and elegant acidity, beautifully balanced by structured acidity with real backbone.
 The finish is exceptionally long, with a hint of sweetness that leaves a graceful impression.

 □Natsu no Sake — No-Blend, Caramel-Free — 21,000 yen
 The first impression is one of refreshing clarity. Richly aromatic and lively notes of mint, citrus, and hojicha tea give way to a smooth mouthfeel and mineral character; the fresh, well-structured acidity stretches across the palate, while minerality and a touch of salinity tighten the finish.
